Snack: Lola Maria Restaurant's Bibingka


I had quite a hectic schedule for Monday, and I decided to hold one of my meetings at Lola Maria, which is at Legend Villas in Mandaluyong city. The staff was setting up the lunch buffet, but I still hadn't eaten anything yet.

I opted to order some bibingka (Php 155), thinking it was going to be a light snack. The staff mentioned it'd take about 15 minutes to serve... which was perfectly fine with me. That practically told me that it was going to be fresh, and was made to order.


Perhaps I got accustomed to seeing small bibingkas. So when my order arrived, I was so surprised at how large it was. Of course, first order of business was to smother the butter all over... then I sprinkled it with some muscovado and pour an entire saucerful of the coconut shavings (I wish I took of a photo of it... it was pretty enticing).


When I sliced off the first piece, steam billowed out from the bibingka. And wow... the taste was just so amazing. It was soft, it tasted really great, and what you'd expect good bibingka to taste like! And like I said, I wasn't expecting it to be so big, so I ended up getting full from eating it.

Gosh, I keep saying this... but I think I'll be back / I'll order this again next time. Perhaps next time, I'll really have this for merienda instead, or possibly closer to mid-day!
