Aling Lucing: Best Sisig in Pampanga (and Possibly in the entire Philippines)


I've always heard that Pampanga is the birthplace of sisig in the Philippines... and that if there was somebody who did it first, or really well, it was sisig from Aling Lucing. We drove all the way to Pampanga to check it out... and across this long stretch of a park, was this al fresco canteen of a place!



There was a fanboy moment that rushed in me when I stepped in. I dunno, maybe coz I've heard about it so many times and that I was finally here... in sisig capital. Actually, what I didn't know was that Anthony Bourdain ate here. I just discovered it when I reached the place!


So we ordered food once we reached the place. It felt much like a carinderia, to be honest. And I was quite curious about the other dishes... but of course I was only there for the sisig.


I asked for takeout because we wanted to compare it directly with another restaurant that also specialised in sisig. But overall, what I can tell you is that I became such a great believer in soft, mushy sisig.

I personally prefer the crunchy type, but after eating sisig from Aling Lucing, I became a fan. Like wowwwwww. It tasted so good, and it's so unlike what other sisig I've had in the past. The umami level of this dish is just so high in the world of sisig. So hats off to this store!
